Introduction


Foe this project, I've decided to develop a recipe for a company name Max Mills.


The recipe it self is the Blueberry and Orange Loaf. This type of recipe meets the requirements and it is easily prepared. Most of the ingredients are available through out the year and easily access. Additionally, consumer can make variations to the recipe by themselves to get their desired end product with extra tips and recipes inside the package. Yet, the product is inexpensive, delicious and healthy to eat as a snack or side dishes.

Easy Steps


1. Sifted flour, salt and sugar. Add orange zest preheat oven to 170c with the fan on.

From the analysis of the market, most of the products currently available are bread mixes with all different types of flours; white, whole meal and such. They also come in various sizes to meet the consumer needs. However, I did see the gaps within the range, the similarity of the products and mostly they were made for bread making machines.


I personally come from oversea country, my experiences of bread there is that bread is soft and moist, unlike most bread here that they are often dry. So I came up with the Idea to introduce the soft and moist textured bread with the goodness of fruits added and the product would be made for hand mixing and machine mixing separately. Unlike any others, we also provided the online extra recipes, which will be undated every month.


Product outline


The muffin orange loaf is soft and moist bread, with bits and pieces of fruits all around the loaf to make the home made appearance. There would be the aroma of orange and some of blueberry. The taste is expected to be sweet and yet fruity. The overall appearance is similar like all other types of loaf, golden brown crust and mixed colour on the inside. The loaf also has the never before seen muffin like interior texture, which has great taste on its own or have them with your favorite spreads.


To enhance the nutritional profile, I've decided to add canned blueberry, orange juice and orange zest into the product. These products will enhance the fibre vitamins and mineral contents of the loaf and consumers can access to these products every time during the year. Additionally, consumer can make changes to the product like change from butter to margarine to reduce the amount of saturated fatty acids. (In this case butter was used, as most people prefer butter to margarine).


Product development


The development of this recipe came from a regular white bread recipe, blueberry loaf and orange loaf recipe from www.allrecipes.com I made some changes to these recipes to make the end product be, as I desired.

Once the loaf was completed for the first time, it's description is as said above, but it also came with unexpectedly nice texture, like muffin and it is also a little chewy.


That's where we get the name Blueberry & Orange Muffin Loaf®.


Packaging


The package was designed to catch the attention of the target market (women aged 0 and above). The package is made from recyclable carton board. The colour is simple green and blue, the loaf in the center surrounded with flowers. The background of the pack would be white, state the white flour (whole meal flour would be brown) and a clear label for hand mix or machine mix.


The design was not made to be fancy but different from other competitors and easy to remember. I tried not to use too much colour to reduce the cost of the packaging production. The main concern is that the consumer recognizes the "bread with flowers" logo of M@YFLOWER.


The dry mixtures in the package would be packed in foil to maintain freshness and prevent moisture absorption of the ingredients


In the box, there will be a recipe booklet with additional variations, which can be made, and extra tips for a successful product


The variations are


1. The canned blueberry could be replaced with canned raspberry to make a delightful raspberry orange muffin loaf. Other berries could also use.


. Apricot orange bread


- Replace 1 cup of blueberry with &frac1; cup dried apricot and &frac1; cup of chopped walnuts


- Add the apricot and walnuts when the recipe said to add the blueberry
